2011 Sauvignon Blanc

Produced from 3 cane vines, the fruit for the 2011 Sauvignon Blanc was harvested on 25th March 2011, at 22.2 Brix, with T/A of 10.5g/l, followed by crushing and gentle pressing. The clear juice was cool fermented and temperatur control ensured the ferment was long and slow to retain primary fruit character and aromatics. Fermentation was halted at around 4g/l residual sugar to balance the natural acidity of the grapes. The wine was kept on light lees for 2 months with occasional stirring - this has allowed the wine integrate somewhat and has enhanced the texture and mid-palate weight.

The wine was finished and filtered prior to bottling in late July 2011.

Tasting Notes

Complex nose shows tropical passionfruit and a seasoning of summer herbs, together with minerality reminiscent of a "sea breeze". The vibrant palate shows ripe citrus, blackcurrant and gooseberry characters, with a lush and lingering mouth feel.

Kina Cliffs Sauvignon Blanc 2011 is the perfect partner to pan-seared scallops, fresh seafood, chicken dishes and leafy green salads. Enjoy now or within the next 2-3 years.
